Stuffed Bhindi Recipe

Today we are going to cook stuffed bhindi recipe. It’s another delicious recipe from an Indian kitchen. Region wise you will find couple of other variation for Bharwan Bhindi. But in maharashtra generally we use roasted peanut and coconut along with other spices for masala stuffing.

  • For Tempering
  • 250 grams Okra/ Lady Finger/ Bhindi
  • 1 Teaspoon Cumin seeds/ jeera
  • 1 Tablespoon Mustard Seeds/ Mohari
  • 2 Tablespoon Oil
  • For Bhindi/Okra Stuffing
  • 3 Tablespoon Roasted Peanut Powder
  • 2 Tablespoon Grated Dry Coconut(soaked in 1 tablespoon water)
  • 2-3 Green Chillies
  • 10-12 Garlic Cloves
  • 1 Inch Ginger
  • 1 Teaspoon Cumin Seeds
  • 1 Tablespoon Coriander Leaves
  • Salt

Soaked 2 tablespoon grated dry coconut. Which we will use stuffing masala.

Stuffed Bhindi Recipe Preparation

Take fresh and tender Bhindi or Okras and rinse well with water and dry on a kitchen towel.

Now trim by cutting the caps and a little of the bottom, then slit the Bhindi lengthwise ensuring that the knife does not cut right through.

To prepare the Bhindi stuffing masala, Take a grinder jar and add roasted peanut powder, soaked grated coconut, 2-3 green chillies, 10-12 garlic cloves, 1 inch ginger, 1 teaspoon cumin seeds and coarsely grind these all ingredients.

In a plate take above ground mixture, add salt and mix very well.

Now place a thumb into the slit of the bhindi and stuff the masala in each Bhindi. Keep remaining masala for later use.

Heat 2 tablespoon oil in non stick pan, then add mustard seeds and cumin seeds. Stir until they crackle.

Then add the stuffed Bhindi to the pan.

After some time stir the bhindi occasionally , add remaining mixture and cook it for a few minutes. It will takes near about 3–4 minutes to become slimy and soft.

Cook it for 2 to 3 minutes by covering its lid, Now our bhindi is almost ready. You can serve stuffed bhindi with chapati or plain paratha.
