Sambar Recipe

"Sambar" is typical south Indian recipe. Sambar usually served with steamed rice as part of main courses in their daily meal. You will find innumerable variations of this recipe based on the state, region and community. Today I am going to cook lentil and vegetable stew based Sambar recipe.

  • For Dal
  • 1 cup Tuvar dal / pigeon pea lentils
  • 1/4 cup Chana dal / Split bengal gram
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Oil
  • 1 teaspoon salt
  • 2 cups Water
  • Vegetables for sambar
  • 1 medium size Potato, cut in cubes
  • 2 medium size Baingans, cut in small size
  • 1-2 Drumstick, remove some outer strings and cut into 2-3 inch pieces
  • For Seasoning
  • 2 medium size Sliced onions
  • 2 medium size Tomato, finely chopped
  • 2-3 Green Chillies, chopped
  • 3-4 Red Bor Chilli
  • 2 bay leaf
  • 8-10 Garlic cloves
  • 1 inch ginger
  • 12-15 Curry leaves
  • 2 teaspoon Mustard seeds
  • 2 teaspoon Cumin seeds
  • 2-3 teaspoon Coriander seeds
  • 1/2 teaspoon Turmeric powder
  • 1-2 teaspoon red chilli powder
  • 2 tablespoon Sambar masala
  • 1 tablespoon Tamarind pulp
  • 1-1.5 tablespoon Jaggery
  • 2 tablespoon Coriander leaves
  • 2-3 tablespoon Oil
  • Salt to taste

Sambar Recipe Preparation

Take 1 cup of Tuvar Dal and 1/4 cup of Chana Dal and rinse with water.

Now pressure cook both dals along with turmeric powder, 1 teaspoon salt, oil and 2 cups water, let it whistle for 3 to 4 on low flame.Once it cooked, just mash it up using spoon or whisk and keep it aside.

Boil the chopped veggies in kadai(potato, baingans and drumsticks) along with some salt and 1 cup water, cook it just for 5-7 minutes.

Make sure that all the chopped veggies are properly boiled.

Now for the tempering heat 2-3 tablespoon oil in kadai, add mustard seeds and cumin seeds let them crackle.

Then add red Bor chillies (Gundu Chilli), chopped green chillies and bay leaf. Fry for a second.

Also known as Gundu Chilli it looks like dried bush berry, It is small and round with shiny skin. It is very popular in South Indian. You will find this chilli in most of the Chettinad cuisines.

Add sliced onions, saute it till they get translucent.

Now add ginger + garlic + coriander seeds paste and fresh curry leaves, fry this mixture for few seconds.

Add finely chopped tomatoes and cook until tomato turns tender.

Its time to add few more spices, add 1/2 teaspoon turmeric powder, 1 teaspoon red chilli powder and 2 tablespoon sambar masala. Saute this mixture till the flavour of spices and seasoning will give you great aroma.

Add our boiled veggies into masala mixture and mix it well.

Now pour mashed dals along with enough water.

Now add salt and chopped coriander leaves, stir it well.

Now add 1 tablespoon tamarind pulp (Soak tamarind in warm water for 20-30 minutes then squeeze the tamarind and remove the pulp).

Now add 1/1.5 tablespoon of Jaggery. Then cook sambar for 7-10 minutes.

Now switch off the gas. Our tangy , sour and delicious sambar is ready to serve. You can be served sambar with rice, idli, dosa and appam.

    You can also add about or tsp garam masala powder to the sambar when you add the veggies. The use of garam masala powder gives a spicy flavour and taste to sambar.
