Kaju Curry Recipe

Today I am going to cook Kaju curry recipe with step by step photos and preparation steps. We often made Kaju curry at our home on special occasions or on family get-together because most of our family members likes this recipe. This is the simple recipe with tomato and onion gravy with our regular kitchen spices. Specially dalchini gives really good flavour to the dish. So lets start with below steps..

  • 1 cup Cashew nuts
  • 3 medium sized Tomatoes, pureed
  • 1 tablespoon Ginger-Garlic paste
  • 1 tablespoon coriander leaves, finely chopped
  • 2 tablespoon Oil
  • 1/2 teaspoon Garam masala powder
  • Salt to taste
  • For Onion Gravy
  • 2 medium Onions, slightly chopped
  • 1 inch Cinnamon /Dalchini
  • 3 Cloves /Launag
  • 3 Green Cardamoms /choti elaichi
  • 2 teaspoon Coriander seeds/dhania seeds
  • 2 teaspoon sugar
  • 4-5 dried red chillies
  • 6-8 cashew nuts

Kaju Curry Recipe Preparation

Soak 1 cup cashew in water for 8-10 minutes.

You can use fried cashew nuts also. Use 1 teaspoon of oil to fry it, Fry it until it get light brown colour.

Meanwhile take 3 medium sized chopped tomatoes and then blend it to a smooth puree in grinder jar.

Then in the same grinder jar, add chopped onions, 1 inch cinnamon, 3 cloves, 3 green cardamoms, coriander seeds, sugar, 4-5 dried red chillies and 6-8 cashew nuts.

Grind it in smooth paste/gravy.

Heat a oil in kadai and add ginger-garlic paste, fry it for a few seconds.

Add onion paste and stir this mixture occasionally for 1 to 2 minutes or till the oil get separated from the gravy.

You will get nice aroma from the spices and gravy will start convert into light brown colour.

Now pour tomato puree and mix it very well.

Gravy will start to ooze out from the sides and looks uniformly.

Add soaked cashew nuts and mix well with gravy.

Then add 1/2 teaspoon Garam masala and salt to taste.

Pour enough water into the gravy for little bit thinner consistency and cook the gravy for 2-3 minutes or till the cashew nuts get soft.

Garnish kaju curry with coriander leaves and lemon.
