Drumstick Masala Curry Recipe
Today we are going to cook Drumstick Masala Curry Recipe in Maharashtrian style with step by step photos and preparation guide. Drumsticks also know as saijan ki phalli in India. It is widely used in most of the Indian curries like sambar, kormas, and dals.
In marathi we called as shevgyachya shenga bhaji and it quite popular in maharashtra.
Drumstick Masala Curry Recipe Ingredients
- 2-3 Drumsticks, remove some outer strings and cut into 2-3 inch pieces
- Roasted Peanut Powder
- 1 large size Onion, sliced
- 3 tablespoon grated dry Coconut
- 15-20 Garlic cloves
- 1 inch Ginger
- 2 Green chillies
- 1 tablespoon Cumin seeds
- 1 tablespoon Coriander seeds
- 1 bay leaf
- 2 Black paper
- 2 Cloves
- 1 Star anise (Star flower)
- 1/2 teaspoon Turmeric powder
- 2-3 teaspoon Red chilli powder
- 2 teaspoon Garam masala
- 2 tablespoon Coriander leaves
- 3-4 tablespoon oil
- Water as required
Drumstick are fully loaded with vitamin C, phosphorus, iron and calcium.
Drumstick Masala Curry Recipe Preparation
Take 2-3 fresh drumsticks and rinse well with water and dry it with kitchen towel. Then you have to cut them into 2-3 inch pieces and need to remove outer strings also.
Take a pan and boil 3 cup of water along with 1 teaspoon of salt and then add chopped drumstick pieces into hot water. You need to boil these pieces till they become soft, Then keep this aside with their remaining water (drumstick stock). We will use this stock while preparing curry.
Heat tava/griddle and roast our masala curry spices (cumin seeds, coriander seeds, black paper, cloves and star flower) till they get little brown colour, then keep roasted spices in a plate.
Now in the same pan, fry sliced onion for 2-3 minutes with 2 teaspoon of oil, till it get little dark brown colour.
Now add garlic cloves and chopped green chillies and saute it few seconds and then keep this mixture aside.
Then fry grated coconut for few seconds and place it with onion mixture.
Now in a grinder jar, add roasted spices, fried onion mixture, fried coconut, ginger and coriander leaves. Then coarsely grind these all ingredients and make a fine paste along with enough water.
Heat a oil in kadai, add the grounded paste and stir continuously until the oil get started separating from the mixture.
Once the mixture get little brown colour, then add turmeric powder, red chilli powder and Garam masala and mix it very well. It start getting a nice aroma from the spices mixture.
Now add roasted peanut powder and fry it for a minute, so the gravy looks uniformly.
Pour some water in the mixture and stir it very well.
Then add boiled drumsticks and mix it very carefully.
Add salt and chopped coriander leaves.
Let it cook for 2 minutes. Finally garnish with coriander leaves and lemon. Serve hot & spicy drumstick masala curry with steamed rice or chapati.
