Baingan Bharta Recipe with Spring Onion

Are you planning to cook Baingan bharta? If yes then this recipe will help you to cook delicious smoky flavoured Baingan bharta in Khandeshi (regional part of Maharashtra) style. I choose "Baingan bharta" as my first blog post because its one of my most favorite recipe.

In maharashtra it is know as Vangyache bharit or only bharit.

Baingan Bharta Recipe with Spring Onion

There are two types of Baingan Green Baingans with white shade and Purple colour Baingan. You can choose either green one or purple one for this bharta recipe.

Let get started with below ingredients.

Baingan Bharta Ingredients

  • 2 medium sized Baingans (eggplants) roughly 500 gms.
  • Full cup of finely chopped fresh green spring onion.
  • 2-3 tablespoons cooking oil.
  • 1 teaspoon Turmeric powder.
  • 1 teaspoon Coriander seeds.
  • 1 teaspoon Cumin seeds.
  • 1 teaspoon Mustard seed.
  • 2 finely chopped green chillies.
  • 8 to 10 medium size garlic cloves.
  • 1 Inch piece of ginger
  • 8-10 piece Of dry coconut slices.
  • 20 - 25 dry roasted peanuts
  • 1 medium size finely chopped tomato.
  • 7-8 curry leaves
  • 2 tablespoons finely chopped fresh green coriander leaves.

Baingan bharta Preparation

Take the baingans and rinse it with water and dry it using any kitchen napkin. Apply some oil on baingans and prick it using knife, This will help to cooked baingans completely in and out.

Let get started to roast the Baingans on medium flame. We have to roast it up-to 15-20 minutes. You have to turn it in between, so it will roasted properly from all the sides.

Once it cooked completely you will notice its got shrink with its original size. Let it cool down for 5 minutes.

As I have applied some oil on baingans, so its skin comes off easily. Now peel the skin from the roasted Baingans and slightly mashed it or you can chopped it.

Now add the 2-3 tablespoons oil in kadhai. Once the oil get heated then add some mustard seeds and cumin seeds. Add 2 finely chopped green chillies , some dry roasted peanuts and 8-10 piece Of dry coconut slices.

Baingan Bharta Recipe - Tempering

Just wait the mixture to get little brown in colour, then add ginger + garlic + coriander seeds paste and curry leaves.

Add 1 medium size finely chopped tomato, cook it well till the tomato become soft then add 1 teaspoon turmeric powder.

Now its time to add 1 cup of finely chopped fresh spring onion and let it cooked by covering its lid.

Stir the mixture until the oil get separates. Now add the mashed Baingans and salt. Just mix it up properly for 4 to 5 minutes or more.

Our Baingan bharta is ready now. For garnishing you can use finely chopped fresh green coriander leaves.

    Baingan bharta - Easy to cook recipe of baingan ka bharta a Roasted aubergine cooked in onion tomato gravy with Indian spices. Using a knife prick the baingan on all the sides.

    Nice khandeshi bharit recipe!!!. Basically I am from Mumbai, But when I was working with Jain irrigation (Jalgaon) I always use to eat Vangache Bharit. Most of time we order bharit puri from restaurants. Nice old memories :) Thanks
